Nine years ago, friends Bill Kraus and Steve Newton came up with their “mission”—to honor America’s military, police officers, firefighters and first responders—and then developed a menu to carry out that plan through a fast-casual concept, Mission BBQ.

In fact, Mission BBQ just opened its 78th location. Moreover, they plan to open another 17 stores in 2019, so it could be closing in on 95 restaurants by end of the year. Its outlets span 16 states. Every one of its restaurants is company-owned, so the two partners maintain control.

The baby backs have been trimmed from the top, and the tips have been trimmed from the bottom, to give them more uniformity. These are longer in length. We serve them by the pound – typically, five to six ribs per pound, or about three to four ribs per plate.
